- Ice makers, ice bins, beverage nozzles, syrup lines, coffee grinders, cooking-oil lines, and the other enclosed components named in §4-602.11(E)(4) have no single numeric interval in the FDA model provision. The 2022 Food Code directs the establishment to the manufacturer’s frequency and uses a condition-based soil-or-mold fallback when the manufacturer states none; verified July 28, 2026.

- The refrigerated-room exception uses 24, 20, 16, or 10 hours. FDA Food Code 2022 §4-602.11(D)(2) shortens the documented interval as ambient temperature rises from 41°F or less through 55°F; verified July 28, 2026.
- True condenser coils: check every 30 days or as needed. True Quick Start Manual TEC_TM_321 Rev. B, dated February 23, 2026, gives the check interval and states that the model-specific installation manual controls the access and procedure.
- Hobart chemical-tube inspection differs by product family: 3 months for LXn/LXGn and 6 months for covered AM16 units with built-in Hobart pumps. Hobart Forms F41243 (10-23) and F41173 (11-21), verified July 28, 2026.
- Hoshizaki KML-325/500/700M_J care spans daily, biweekly, monthly, and yearly intervals. Its official maintenance schedule lists daily scoop cleaning, biweekly air-filter inspection, monthly external-filter and exterior tasks, and yearly cleaning/sanitizing plus inlet-screen, condenser, and hose tasks; verified July 28, 2026.
- NFPA 96-2021 and NFPA 96-2024 use four exhaust-inspection frequencies: monthly, quarterly, semiannually, and annually. Official NFPA material reproducing Table 12.4 assigns the interval by cooking type or volume; local application depends on the controlling edition and authority having jurisdiction; verified July 28, 2026.

- Covered portable cord-and-plug equipment: inspect before use on each shift. OSHA 29 CFR 1910.334(a)(2)(i) states the visual-inspection rule, includes an exception for equipment left connected and not exposed to damage until relocation, and requires damaged items to be removed from service under paragraph (ii); verified July 28, 2026.

When a controlling rule expressly directs the establishment to the manufacturer’s frequency, the manufacturer document supplies the interval named by that rule.
How is the commercial kitchen equipment maintenance schedule organized by frequency?
The verified records do not fit cleanly into daily, weekly, and monthly buckets: some are event-triggered, some are operating thresholds, and some remain manufacturer- or condition-dependent. The frequency view below gives representative records for each cadence without replacing the applicability and source fields in the complete matrix.

What does this data show — and what does it not show?
This dataset shows what a defined set of primary sources said about maintenance timing, operating thresholds, work boundaries, and local administration when checked on July 28, 2026. It does not measure industry averages, failure rates, compliance rates, or what most kitchens actually do.
Manufacturer records apply only to the cited model, family, or stated product-category scope. The Hobart difference documented below exists precisely because one manufacturer’s intervals do not automatically transfer across its own product lines, much less across an entire equipment category.
The matrix is not a substitute for the label and manual on the installed equipment. It is a map of where the relevant instructions live, what the checked sources say, and where the source itself leaves the timing condition-triggered.
How was this commercial kitchen equipment maintenance checklist built?
We collected consequential facts from primary issuers and original manufacturer documents only. The verification date records when the source was checked; the source’s own publication, form, revision, or effective date is retained separately so a 2020 manual checked in 2026 is not misrepresented as a 2026 document.
What did we read directly?
The source set includes the FDA Food Code 2022 and the December 2024 Supplement; the corresponding Tennessee Chapter 1200-23-01 provisions; OSHA 29 CFR 1910.334 and 1910.147; EPA Section 608 certification requirements; official NFPA development and extract materials reproducing the cited NFPA 96 provisions; Shelby County Health Department pages and its retail food-service checklist; and original documents from True, Hoshizaki, Hobart, Vulcan/Wolf, Cornelius, Heatcraft, RATIONAL, and Manitowoc.
How were the records normalized?
Each record carries one defined applicability unit, one task or check, one interval or trigger, one cadence basis, one responsible-role classification, one stop-use or escalation boundary, one primary source, one exact locator, and one verification date. A manual that lists daily, biweekly, monthly, and yearly work produces separate records rather than one averaged “regular maintenance” line.
What rules governed the compilation?
- We did not convert “as necessary” into a number. FDA Food Code §4-602.13 remains condition-triggered because the source states no weekly or monthly interval.
- We did not transfer one model’s interval to a category. The three-month Hobart LXn/LXGn interval remains an LXn/LXGn interval; the six-month AM16 interval remains limited to covered AM16 units with built-in Hobart chemical pumps.
- We did not harmonize conflicts. Where manufacturer documents differ, both records publish with their exact applicability attached.
- We did not turn a national model or fire reference into a local-law claim. FDA and NFPA rows carry their source status, and Tennessee rows are separately identified.
How can the dataset be reproduced?
Open the cited primary source; navigate to the recorded locator; confirm the model, product family, or geography; record the task, interval or trigger, role boundary, and stop-use condition without expanding it into a procedure; record the source revision and verification date; then regenerate the HTML table, CSV, and JSON from the same structured records.
Where does the Food Code stop setting the interval and hand it to the manufacturer?
FDA Food Code 2022 §4-602.11(E)(4) covers ice bins and beverage-dispensing nozzles plus enclosed components of equipment including ice makers, cooking-oil storage tanks and distribution lines, beverage and syrup lines or tubes, coffee-bean grinders, and water-vending equipment. For that list, the model provision uses the frequency specified by the manufacturer; only when the manufacturer states none does the condition-based fallback apply — often enough to prevent soil or mold accumulation.
This provision changes what a defensible interval looks like: the checklist must preserve the manufacturer source instead of inventing one category-wide number.
- The manufacturer document supplies the interval named by the provision. That is narrower and more accurate than saying every statement in a manual automatically has the force of law.
- “Clean every six months” is not a universal ice-machine rule. Manitowoc’s current guidance states six months, while the cited Hoshizaki KML schedule states at least yearly for its clean-and-sanitize task and adds shorter intervals for other components.
- A missing model document does not justify inventing a date. The FDA model provision’s fallback remains condition-based when the manufacturer states no frequency.

Do commercial kitchen equipment manufacturers use the same maintenance intervals?
No. The primary documents below differ across product families and sometimes within a single manufacturer, which is why this page preserves model and family qualifiers rather than publishing one category-wide number.

Hobart’s two dishmachine families differ by a factor of two on the same chemical-tube inspection task, and the AM16 family uses different machine-prompt logic across its BAS and ASR/ADV/SVLT groups. Across the cited refrigeration and ice-machine models, even condenser-inspection timing ranges from every 30 days or as needed to yearly or more often depending on location. That does not establish that one source is wrong. It establishes that a single interval cannot be transferred to every commercial dishwasher, condenser, or ice machine without checking applicability.
How often does the FDA Food Code say equipment should be cleaned or checked?
The FDA model sets a limited number of fixed cleaning intervals, several conditional exceptions, operating thresholds, and condition standards. The December 2024 Supplement revised §4-501.116 to cover sanitizing or disinfecting solution concentration and to require use of the test kit according to its manufacturer label instructions; the other Chapter 4 intervals below retain their cited 2022 locators.
The Food Code is a model offered for jurisdictional adoption, not a universal federal operating rule for every restaurant. Table 5 therefore identifies these as FDA model provisions, while Table 16 separately records Tennessee’s rule locators.

Who is allowed to perform each maintenance task?
The role field is the matrix’s safety boundary. A daily cleaning line, a cord inspection, internal service behind an electrical lockout, covered refrigerant work, and fire-suppression maintenance cannot be assigned in the same undifferentiated voice.
